The Coup
The Coup's bartender, Katie, wanted to capture the essence of summer in a glass. She paired the tropical flavours of mango, passionfruit and dragonfruit with coconut rum. The sea foam is a vegan whip that is made from blue spirulina extract. The inspiration stemmed from wanting to create a bright and colourful cocktail that will remind us of the beach as we enter into the fall.
Recipe
4 oz organic mango juice
0.5 oz agave
1 oz coconut rum
1 oz mango vodka
0.5 citrus
0.5 bar spoon freeze dried dragonfruit powder
0.5 bar spoon poppy seeds
Blue sea foam
Blue sea foam recipe:
400 ml Aquafaba,
200 ml passion fruit juice,
1 oz agave,
0.5 bar spoon blue phycocyanin
Add ingredients to whip canister and charge twice.
Shake mango and agave, pour over fresh ice. Shake rum, vodka and citrus, dragonfruit and poppy seeds, layer over mango. Top with sea foam and garnish with sprinkle of poppy seeds.
